Moi moi is Nigeria’s steamed bean pudding – peeled black-eyed beans blended smooth with pepper, onion and a little oil, then steamed until it sets into something soft, savoury and satisfying. It is the side that turns a plate of rice into a proper Nigerian meal.
Making moi moi properly is slow work. The beans have to be soaked and peeled by hand before they are blended with red pepper, onion and seasoning into a smooth batter. That batter is portioned and steamed gently until it firms up, holding its shape while staying tender all the way through.
The flavour is mild, savoury and gently peppery, and because it is built entirely on beans it is naturally high in protein and gluten-free. Guests who avoid meat often order it as a main with rice; everyone else treats it as the side no Nigerian party plate is complete without.
Peeled black-eyed beans, red bell pepper, scotch bonnet, onion, cooking oil and seasoning – nothing more complicated than that. Traditional versions may include egg or fish; ask at the counter about the day’s batch if you have dietary preferences to work around.
