About Our Egusi Soup with Fufu

Egusi are the seeds of a West African melon. Ground fine and cooked in palm oil with blended pepper, onion and stock, they thicken into a rich, slightly grainy soup with a distinctive nutty flavour that has no real equivalent in European or Asian cooking. We finish ours with leafy greens and a mix of tender meat and fish so every spoonful has something in it.

Fufu is the soft, smooth dough eaten with it. You pinch off a small piece, roll it lightly, make a dip with your thumb and scoop the soup – it is not chewed so much as swallowed, which is why Nigerians simply call it a swallow.
